PERUVIAN CHICKEN INGREDIENTS:
2.5lb of Bone in, Skin on, Chicken Thighs
1/3 cup of Soy Sauce
4 Cloves of Garlic, smashed and peeled
Juice of 1 Lime, about 3 tbsp
2 tbsp of Olive Oil
1 tsp of Dried Oregano
1/2 tsp of Cumin
Heavy Pinch of Freshly Ground Black Pepper
For the Sauce:
3/4 cup of Mayo
1 Small Bunch of Cilantro
1 Serrano or Jalapeño, seeded optional
2 Cloves of Garlic, smashed and peeled
1/4 of a Small Yellow Onion or 3 Scallions
2 Tbsp of Extra Virgin Olive Oil
Juice of 1 Lime
Salt to taste
Preparation
Prepare the Marinade:
- In a small bowl, combine the minced garlic, ground cumin, paprika, dried oregano, ground turmeric, ground black pepper, fresh lime juice, soy sauce, and olive oil. Whisk until well combined.
Marinate the Chicken:
- Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, ensuring that each piece is evenly coated. Cover the dish or seal the bag, and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld.
Grill the Chicken:
- Preheat your grill to medium-high heat. Remove the chicken from the marinade, shaking off any excess, and season lightly with salt. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and charred on the outside, with grill marks.
Serve:
- Transfer the grilled chicken to a serving platter and garnish with chopped fresh cilantro. Serve immediately with lime wedges on the side for squeezing over the chicken. Enjoy your Peruvian-inspired grilled chicken with your favorite sides, such as rice, roasted vegetables, or a crisp salad.
Whether enjoyed hot off the grill or served cold as leftovers, this Peruvian-inspired chicken is a delicious addition to any meal.
